Tomato, Cucumber & Mozzarella Salad

Sometimes a few fresh ingredients make the best dishes.  Even though it’s technically not summer yet, it still feels like summer, and this Tomato, Cucumber & Mozzarella Salad is perfect with any sort of BBQ or grilled dish.  This salad is simple, but so delicious, especially when your ingredients are fresh.  A little Italian olive oil, balsamic vinegar, sea salt, and cracked fresh pepper and this salad is good to go.  Enjoy!

What is your favorite summer salad?

  1. What a fabulous recipe looks delicious.

  2. I just made something similar, minus the cucumber although I have made that version in the past. It definitely means summer has arrived when you can have fresh tomato salads.

This sounds refreshing and delicious! I noticed that there are not too many salads that include cucumbers (when I blog hop) and it’s one of my favorite veggie, so I’m glad to see this one. Simple and easy – perfect week night or BBQ salad!
