I love Mexican food – I don’t think I could ever get sick of it. I love the freshness of the ingredients and the various types of dishes that you can make. For dinner last week, my hubby and I had my sister, my brother-in-law, and my sister-in-law over for dinner. Instead of cooking the traditional Italian dinner that we usually have, I decided to create a fajita and taco buffet. I cooked some chicken tenderloins that had been seasoned with a fajita rub, onions, and peppers. I also cooked some ground turkey that had been seasoned with Mexican spices. I placed out various toppings including salsa, sour cream, cheese, lettuce, tomatoes, jalapenos, etc. I also made some homemade guacamole that I was very excited about because sometimes I forget how amazing fresh guacamole can be. It can take any taco or fajita to the next level! Ok maybe I’m exaggerating, but guacamole is so delicious especially when it’s homemade. I made a really simple guacamole with only 5 ingredients (plus salt and pepper). This is my 4th 10-with-5 challenge recipe. Hope you guys enjoy!

- 2 ripe avocados, pitted and peeled
- 1/2 cup chopped fresh cilantro
- 1 jalapeno pepper, de-seeded and minced
- 1/2 cup tomato salsa
- Juice of 1 fresh lime
- Sea salt and fresh ground pepper for seasoning
- Mash the avocados with a fork until smooth.
- Add the cilantro, onion, jalapeno, salsa, and lime juice and mix until incorporated.
- Season with salt and pepper.

I love guacamole too and make it at home a lot. Your ingredients are a little different from mine, but sounds good. I will try yours next time.
I ate Mexican for dinner last night, and lunch today. I’m with ya! I love adding tomatoes and red onion to guac to change it up a bit – but cilantro is always a must for me! Yum.

mmm, simple and delicious! When I went to Mexico a couple of years ago we went to a private beach setting [where they film the Corona commercials!] and the staff made a 4L bowl of guacamole.
I sat on the beach WITH the bowl and a huge pile of tortillas and watched the ocean. I’ve never been happier in my life.

YIKES!! I LOVE homemade guacamole–it’s absolutely the best when it’s pure, simple, and has a short ingredient list. Your picture looks fantastic, too–the bright green really pops!
